When asked what is best for a couple celebrating a romantic occasion, Chef Alleshouse recommends starting with his Pistachio Dijon Crusted Lamb, served with a roasted winter vegetable ragout, honey roasted figs, balsamic reduction, and Nalo micro arugula. Chef admits with a wry smile, "Just so you know, the Dijon, honey, and figs are all aphrodisiacs." Pair with a glass of wine and panoramic ocean views, for what promises to be and evening to savor.

The First Lady of Waikiki, the Moana Surfrider a Westin Resort and Spa, stands as an icon of class and elegance with its Victorian charm and newest addition, Bin 1901. Located in the lobby next to the historic grand staircase, no reservations are needed for this sophisticated pairing bar. Chef de Cuisine William Chen provides the culinary inspiration for this new concept. "We are looking to do something small, intimate, and fun," says Chen. "We have created an area for guests to relax with some interesting libations and a couple of dishes to nibble on." Succulent offerings include Wagyu Steak Tartare topped with Okinawan potato crisps, Cold Smoked Scallops with jalapeno, lime salt, shiso, and olive oil, and the Oyster "Shooter" garnished with chili water granita and served with a generous shot of chilled Ocean Vodka. Open nightly with a live pianist until 10:00pm, enjoy the atmosphere and be creative with your own pairings.
